Mushrooms, truffles, game - the specialties of the Umbrian cuisine in autumn
In Umbria the season for wild mushrooms starts in September. With the first rains after the summer drought the porcicni mushrooms (edible boletus) sprout in the oak woods around La Rogaia. And the hunters shoot wild boar, pheasants and rabbits for delicious venison dishes. There are truffles in Umbria (almost) all year round but the peak season for the precious tuber is the autumn.
With such sumptious ingredients Ornella is in her element and draws on unlimited resources. She brings to the table what she has collected in the forest or what she gets from the hunters. And the participants of class can go on a truffle hunt themselves and prepare later deliciuos dishes with what they have found ...
